Gluten-Free Ladyfingers

Ladyfingers

Ingredients:


  • 4 large eggs, separated
  • 1/2 cup (100g) granulated sugar
  • 1 tsp vanilla extract
  • 1/2 cup (60g) gluten-free flour (almond flour, oat flour, or coconut flour)
  • 1/4 cup (30g) cornstarch
  • Powdered sugar for dusting

Instructions:


  1. Preheat your oven to 350°F (180°C).
  2. In a mixing bowl, whip the egg whites until stiff peaks form.
  3. In another bowl, beat the egg yolks with sugar until pale and creamy.
  4. Gently fold the egg whites into the egg yolk mixture.
  5. Sift the gluten-free flour and cornstarch over the egg mixture, folding gently until smooth.
  6. Transfer the batter to a piping bag fitted with a round tip.
  7. Pipe 3-inch (7.5 cm) long ladyfingers onto parchment-lined baking sheets.
  8. Dust with powdered sugar.
  9. Bake for 12-15 minutes or until lightly golden.
  10. Let them cool completely before using in desserts.
