Gluten-Free Crepes with Berries and Cream


Welcome back to our blog! Today, we’re taking a delicious detour to France, the home of the elegant and versatile crepe.


These delicate, paper-thin pancakes have won the hearts and taste buds of people around the globe. Join us as we explore the enchanting world of crepes and uncover why they’re a must-try culinary experience. While enjoying crepes in a traditional French creperie is a delightful experience, making them at home can be just as rewarding. Plus, it offers the freedom to experiment with different fillings and flavors, making each crepe a unique creation.

Crepes with Berries and Cream

Ingredients:


  • 1 cup (120g) gluten-free flour of your choice (almond flour, oat flour, or coconut flour)
  • 1 1/2 cups (360ml) vegan or dairy milk
  • 2 large eggs
  • 2 tbsp (30g) melted butter
  • 1 tsp vanilla extract
  • Pinch of salt
  • Butter for greasing the pan


For Serving:


  • Whipped cream
  • Fresh berries of your choice (strawberries or raspberries are our personal favorites!)
  • Powdered sugar

Instructions:


  1. In a blender, combine the gluten-free flour, milk, eggs, melted butter, vanilla extract, and a pinch of salt. Blend until smooth.
  2. Heat a crepe pan over medium heat. Melt about 1 tsp of butter to coat the pan evenly.
  3. Lift the pan and pour 2 tbsp of batter into the center. Tilt the pan to spread the batter to the edges.
  4. Return the pan to the heat and cook until the crepe is golden underneath (about 1-2 minutes).
  5. Flip the crepe and cook for another 1-2 minutes until golden.
  6. Repeat with the remaining batter, adding more butter as needed.
  7. Place whipped cream and berries in the center of each crepe.
  8. Carefully fold the crepe in half, then fold it in half again.
  9. Lightly dust the crepe with powdered sugar or add other toppings as desired.
  10. Serve the crepes warm or at room temperature.
